- First chopped all the veggies & keep them ready. Also boil the tomatoes & make a puree out of it.
- Now heat oil in a large pan, once the oil heats up add ginger, garlic & sauté them for 30 seconds. Then add sliced onions and cook them for 2minutes.
- Then add salt, carrots, french beans and cook these veggies for 2-3 minutes on medium flame.
- Now add cabbage, capsicum and cook all the veggies well for another 5-6 minutes. Remember do not overcook the veggies.
- Now add tomato puree and cook it well for another 2 minutes.
- Then add sezhwan sauce and mix well.
- Now in a bowl take cornflour, water, red chilli sauce & soya sauce & make a paste out of it, then add this to the veggies and mix very nicely.
- Cook the chopsuey for 5-10 minutes on medium flame, then add tomato ketchup and mix well & again cook it for another 10 minutes and then switch off the flame.
- Once the chopsuey is a little warm, plate it up, top it with lots of fried noodles and serve.
