- Prepare 2 tablespoons Pasta sauce
- Make ready 1/4 th cup shredded reduced fat mozzarella cheese

- Heat oil in a non-stick pan, add onions and sauté till it is lightly cooked.
- Now add in bell peppers and veggies(except lettuce) and toss well. - Cook for 2 minutes to retain the colour and crunch.
- Now add in garlic, black pepper powder, oregano and salt and mix well. Drizzle lemon juice and mix well amd switch off the flame.
- Assembling of the sandwich - Take focaccia bread and make a horizontal slit in the middle. (You can toast them if you want to)
- Now spread the pasta sauce on both sides(halves) and top with the prepared veggie mixture.
- Add the cheese slices, sprinkle oregano, drizzle 2-3 drops of mustard sauce and lay the lettuce leaf.
- Now cover it with the other half on top and press down.
- Microwave for 40 seconds so that the cheese melts.
- Serve it immediately to your kids and loved ones with a hot cup of coffee.
