  2. Rinse the spinach well, then parboil for 2 minutes in a generous amount of boiling water, dunking the stalk in first (For those who dislike the taste of the pink part of the stalk, remove it. It's edible if well-rinsed. It's actually quite tasty!)
  3. Once the spinach is parboiled, chill in cold water, squeeze out any excess water, then cut into 5 cm lengths.
