- Get 1 cup soaked rice

Steps to make Coconut Rice:
- Wash 1 cup rice and soak for 15-20 mins.
- In a heavy bottom vessel take coconut oil/ghee add mustard seeds
- Add bay leaf, cardamom, cloves, star anice and curry leaves, green chillies and saute
- Add chopped onions, salt and saute.
- Add soaked rice and mix well.
- Add coconut milk and a cup of water and cover lid and cook for 5-10 mins on low flame.
- Once water dried check whether cooked. If not add some water and cover and let it cook
- Ready to serve garnish with fried cashewa.(optional)
