  2. Grate the coconut.sieve with warm water and keep the milk squeezed out aside.
  3. Boil the meat with curry,salt,onion,knorr seasoning boil till is soft and tender.
  4. Slice fresh tomatoes,onion and pepper
  5. Place a dry pot on heat,add vegetable oil onces is hot pour in the sliced onion.
  6. Fry for 30seconds,pour in the sliced tomatoes and pepper.
  7. Fry for 3mins.pour in the meat stock and coconut milk cover to boil very well at least for 4 minutes.
  8. Uncover and add knorr cubes,salt,curry and mixed spices.boil for 3 minutes.
  9. Pour in the rice.stir with a wooden spoon very well at least for 30seconds to get all the ingredients to mix very well with the rice.
  10. Cover to boil.boil for 10-13mins taste for salt and put off when the rice is soft and is dry.
  11. Pour in vegetable oil in a dry pan on heat,slice the plantain and gradually add in the hot vegetable oil.
  12. Fry for few mins and bring out.
  13. Add the already boiled meat in the hot vegetable oil fry for 4mins.
  14. Bring it out from the oil when is done.
  15. Leave a teaspoon of vegetable oil in the frying pan.add sliced pepper and onion.
  16. Fry for 1min and pour in tge fried meat.mix together and turn off the heat.
