  3. For the beer, IPA is good if you're going spicy and light beer is good for mild. For the chilis, I like arbol and chipotle, but do whatever you like.
  4. Cover and simmer for at least a half hour, but the longer the better.
  5. Plate, add cheese and sour cream to taste, and serve!

To me, fall is chili season. I love simmering big pots of traditional chili once the weather turns cold, to serve with fluffy cornbread. Reduce heat to medium low and add beans. Ladle chili into bowls and serve. Pumpkin chili is so rich and flavorful!
