This chili was so appetizing as it was filled with bright green, red, & orange vegetables. I served chili over brown rice to a receptive non vegetarian guest.
Instructions to make Nearly Vegan Chilli:
- Sauteed with 1tbs of coconut oil onion, tomatoes, bell pepper,veggie meat, mixed vegetables until cook.
- To sauteed mixture add tomato paste, oregano, paprika, garlic powder, salt, chilli powder and stir. Then Add chicken broth, beans,tomato sauce or marinara sauce and stir then cover to simmer for 10mins. Stir at intervals.
The chili tasted wonderful & will be a favorite dish that will be prepared often. I liked the fact that there would be leftovers to simply reheat. Just with all chili recipes, this vegan chili was delicious freshly made, but it was even better the next day. The tofu stays perfectly chewy and the flavours deepen and get even more flavourful. To make the best vegan chili ever: Add the olive oil to a large pot and heat over medium-high heat.
