The ingredients needed to make Classic Potato Salad:
  1. Make ready 3 large russet potatoes
  2. Make ready 1 celery stock - diced
  3. Take 2 Green onion - chopped
  4. Take 4 eggs - hard boiled, then diced
  5. Make ready 3/4 cup real mayonnaise
  6. Take 1/2 tbsp mustard
  7. Prepare 1 1/2 tbsp apple cider vinegar
  8. Take Salt & Pepper - to your liking
  9. Get 1 sprinkle of paprika (Optional garnish)
Steps to make Classic Potato Salad:
  1. Wash, peel, & boil potatoes. Approx. 10-15 minutes or until easily pierced with a fork - do not over cook as you don’t want them overly mushy. Once cooked, drain, & cube to desired size.
  2. In a large mixing bowl combine the celery, green onion, eggs, mayo, mustard & vinegar. (I personally add an extra heaping spoonful of mayo & a squirt of spicy mustard to the mix).
  3. Once ingredients in step 2 are combined toss in the potatoes, fold gently until well mixed. Salt & Pepper to taste (add additional mayo if needed).
  4. Transfer to a serving dish. Garnish with paprika!
