- Add oil in a non-stick pot on a medium flame. Add onions and after 3 minutes add the ginger and garlic
- Turn the heat down and add the other spices and mix. Add tomatoes and stir.
- Turn up to a medium heat add peanut powder and mix. Simmer until the oil rises to the surface. Add boiled sweetcorn and half a can of sweetcorn and stir. Add lemon juice, sugar and garnish with coriander
