  1. Prepare 425 grams Canned Corn, preferably with cream.
  2. Take 2 tbsp Water
  3. Make ready 1 tbsp Cornstarch
  4. Take 1 1/2 cup Diced chicken

  6. Make ready 3 cup Chicken Stock (I used beef as I didn't have chicken, but it works as well.)
  7. Prepare 1 Coriander for garnish

Perfect to use up that little bit of leftover chicken, or just leave it out and make this vegetarian, it is truly just as delicious. When chicken is done, remove to cutting board until cool enough to debone. While chicken is cooling, strain broth through a fine sieve. Debone chicken and cut meat into bite-sized pieces.

Instructions to make Chicken Corn Soup:
  1. Add the stock, corn and chicken into a saucepan to boil.
  2. Once it has boiled, stir in the cornstarch after mixing it with the water
  3. Leave it to simmer for around two minutes before cracking the eggs over the pot.
  4. Stir to mix and serve with coriander.

Add corn (frozen works fine)to broth and bring to a boil. If you're using frozen kernels, puree half in a food processor or blender, adding a little soup if the liquid is needed.
