Instructions to make Vadai without oil:
  1. Soak the Gota/dal; after washing it well; for at least 1 hour.
  2. In a mixer grinder; add the Gota/dal without water. Add in all the seasonings.
  3. Grind it to a slightly thick batter. The consistency must be such that if you dunk your hand in water and take the batter, it should be non-sticky. Another way to test it is by dropping a very small batter in a cup of water. If it floats, then the consistency is right.
  4. Now, transfer that to a container and add in curry leaves. Mix well to incorporate air into it.
  5. Finally, spoon in 1 tablespoon of batter in the donut maker mould. Close and wait about 4 minutes. Open carefully and flip the vadais and let it steam for 3 minutes. When golden brown, take them hot and serve it with chutney/sambar. You may also drop them in hot water, let soak 10 minutes. Squeeze them and add thick yogurt. Top off with grated carrot and cilantro leaves.
  6. Tip: washing the mixer grinder jar could be trouble. Therefore, I suggest that you add in some water, add in a couple of pumps of liquid dish detergent and give it a pulse for maximum 5 seconds. Then rounder off with normal water and you have your clean jar back. This could be done anytime you wanted to wash your mixer grinder jar. Or blender, for that matter too.

These deep fried fritters are a No onion no garlic version. Similar versions of Ulundu vadai is made during Navratri festival in south India and served with coconut chutney and sambar. Both the sambar and coconut chutney are made without adding onions or garlic. I have only used urad dal (black gram) in making this vadai.
