I don't soak the peas overnight (like my mom used to do), and it still turns out perfect every time. I also will substitute some of the water with chicken broth to give it a little more flavor. Garbanzo beans, green beans, chunks of sweet potato and tomato are combined in chicken broth seasoned with thyme, basil and paprika in this soup which can easily be altered to suit a vegetarian diet. To further extend the shelf life of the soup, freeze it. It reheats really well from frozen.
