  1. Take 2 lbs ground tenderloin tips (any lean grd beef will work)
  2. Prepare 1 package taco seasoning
  3. Get 3 drops liquid smoke
  4. Prepare 2 tbsp soy sauce
  5. Get 1 tbsp apple cider vinegar

Instructions to make Smokey Taco Beef Jerky:
  1. Grind 2 lbs of lean beef, I used tenderloin tips. Any lean cut will work or pre ground is fine too.
  2. Add all ingredients together and let marinate overnight.
  3. Stuff into a jerky gun and squeeze out onto the dehydrator racks. I used a wide tip, it has about half an inch opening. I've made this with a 1/4 or so size similar to a Slim Jim size and just didn't get the tenderness I wanted.
  4. Dehydrate according to the instructions for your dehydrator or use the oven at the lowest temperature. Mine took about 28-30 hrs.
  5. Bag, tag and devour!

Preparing jerky in a smoker, rather than a dehydrator or oven, takes the flavor to a whole new dimension. Jerky is a great way to preserve meats. That said I have never seen a large batch of jerky last for more than a couple of days in my home. Trim off any excess fat and silverskin from beef. It's mind-blowingly good jerky for those who like a smokin' high protein fix.
