The original recipe called for green pepper and jalapeno which I am sure would also be great. I added some Cajun seasoning and Seafood seasoning which is beautiful with the crawfish. In a bowl, combine cornmeal, salt and soda. In medium bowl, beat eggs, chopped onions and Jalapeno Peppers.

Steps to make Mr. Mike's Crawfish Cornbread:
  1. Preheat oven to 350°F.
  2. In a medium size skillet over medium heat, melt the butter and sauté the onion, bell pepper, and jalapeno until the onions are translucent. Set aside to cool.
  3. Mix together the cornbread mix, eggs, corn, and creamed corn in a large bowl.
  4. Stir in the chopped crawfish tails and cheddar cheese. Mix well to combine.
  5. Stir in the sauteed vegetables and stir to combine.
  6. Spread the cornbread out in a greased 9x13 baking dish and bake in the oven for 45-55 minutes.
  7. Allow to cool for 10-15 minutes
