- First, get your ingredients ready, Milk, eggs and butter. And you tools, whisk, spatula, tbsp and a bowl.
- I have used a thin, small cake pan for extra mixture as I like to use less mixture in my Cupcakes
- Now, Open up your cake mix in to your mixing bowl.
- Add in your Egg and milk.
- And mix for 1 minute or until combined.
- When combined, place your Cupcake cases in the tins
- Now, preheat oven to 170°C / 325°F / Fan 150°C / Gas mark 3
- When done preheating divide the mixture evenly across the cases, I leave a few extra mixture for my tin.
- I fill my Cupcakes half way as they will rise.
- Next I will grease my cake tin with butter but if you have a greasing spray you can use that.but before greasing, I like to heat my pan just a little bit.
- You can now add the rest of your mixture!
- Now place both trays into the preheated oven
- Take them out when ready, to know if they're ready, stick a toothpick or a fork and if it comes out with no residue then it's done!
- Now leave them to cool while we make the icing!
- To make the icing, open the package and pour into a different mixing bowl
- Add the butter slowly till it's becomes thick but smooth
- Put it into a piping bag and start decorating!
- To make the surprise icing on the inside cut a square out

Gently push cut corner of bag into center of cupcake.. Meringue topping makes these lemon curd-filled cupcakes taste just like classic lemon meringue pie. Here is a recipe I use for beautifully delicious lemon cupcakes.
