Vendakkai Sambar, Ladies Finger Sambar or Okra Sambar whatever we may like to call this vendakkai sambar is one of my favorite and I actually like this more than..vendakkai sambar recipe or bhindi sambar. it includes recipes like, tomato sambar, ash gourd sambar, mor kulumbu, avial recipe, udupi sambar, vegetable sambar, gobi.
To begin with this particular recipe, we have to first prepare a few ingredients. You can cook okra/ vendakka sambar using 20 ingredients and 9 steps. Here is how you cook it.
The ingredients needed to make Okra/ Vendakka Sambar:
- Take To pressure cook–
- Prepare 2 cups toor dhal
- Take 2 tomatoes
- Make ready 10 garlic cloves
- Make ready 1 tspn asofetida/ hing
- Make ready 1/2 tspn turmeric powder
- Make ready For Vegetable–
- Prepare 500 g Ladies finger/okra
- Prepare For tempering–
- Prepare 1 tsp vadavam
- Take 2 dry red chilli (broken)
- Take 1 onion (chopped)
- Make ready 2 tomatoes (chopped)
- Take 2 tsp red chilli powder
- Prepare 1/2 tsp turmeric powder
- Get To taste salt
- Prepare 3 tbspn oil
- Take To soak–
- Prepare 1 ball Tamarind(lemon size)in ½ cup water
- Make ready 5 tbspn coriander leaves (chopped)
Ladies finger - vendakkai - okra - should be added after sauteeing to avoid the smiley nature. I have used my mom's sambar powder: https. Steps to make Okra/ Vendakka Sambar:
- Take all the ingredients under To pressure cook in a cooker, add water and cook for 4 whistles. Lower flame for 10 minutes.
- Soak tamarind in water. Take ladies finger and dry roast till stickiness disappears. Keep aside.
- Heat oil in a vessel, add vadavam and dry red chilli. (Instead of vadavam you can also add mustard seeds,urad dhal, fenugreek seeds and chopped shallots and fry till dark brown)
- Next add curry leaves,1 tbspn coriander leaves.
- Now add onions and saute till translucent. Then add tomatoes cook till mushy.
- Add salt and red chilli powder. Saute till raw smell goes.
- Mash the cooked dhal in pressure cooker and add the ladies finger to it.
- Extract tamarind water. Add dhal and tamarind water. Check salt and tanginess. Cover and cook till it boils.
- Garnish with coriander leaves. Serve hot with steamed rice or for tiffin.
