  2. Take 1 green pepper chopped into chunks

  4. Take 1 red onion chopped into chunks

  6. Prepare 1 can coconut milk
  7. Prepare 1 fresh kaffir lime leaf
  8. Get 1 tablespoon olive oil

  10. Take Lime, to garnish
  11. Prepare Thai green curry paste - jar or pre-made
Steps to make Thai Green Curry:
  1. Cook the diced chicken in the olive oil for 2 mins on each side (4 mins in total)
  2. Add the chopped pepper, onion, baby corn, bamboo shoots and lime leaf, cook for 2 mins
  3. Add the Thai green curry paste and cook for 2 mins
  4. Stir in the coconut milk and cook for 2 mins
  5. Boil rice per instructions (mine was ready in 2 mins). Drain, add to serving bowls. Add Thai green curry on top. Add lime garnish to finish
